At Alpuente, the cuisine is characterized by the use of simple ingredients prepared with great care and effort—as in this case, where a mortar was used to make the dish.
Delicious ingredients
Cod, deboned and skinned; potatoes; garlic cloves; egg yolks; oil; and salt.
Traditional Preparation
Boil the whole potatoes with their skins on, and then the cod in large pieces. Peel the cooked potatoes and remove the bones and skin from the cod. In a mortar, crush the garlic with a little salt. In a bowl, combine the garlic, potatoes, and cod. Mash and mix all the ingredients together. Make a well for the egg yolks and add a little oil. Add the oil gradually, stirring constantly until the desired texture is achieved.
A dish with humble origins
Traditionally, this dish was supposedly carried by muleteers during their long journeys, thanks to its long shelf life.
