Every household used to make these hard but incredibly flavorful cookies. They were stored for weeks in metal tins, though sometimes they had to be hidden away to resist temptation.

The Ritual of Traditional Preparation
Beat the eggs with the sugar. Next, add the flour and almonds. Shape the mixture into a long loaf and bake it in the oven until it’s lightly browned. We take it out and, while it’s still hot, cut it into 1-cm-thick slices. We put the slices back in the oven until they brown a little more, and then they’re ready to enjoy!
