The Origin

Cooking that begins long before you light the stove

Lumbre It began as a dining experience that opens up to the landscape of Agulo. Each course interprets the mist of the laurel forest, the terraced fields that slope down toward the sea, and an agricultural culture that has learned to turn hardship into flavor.

The kitchen works with small-scale producers from La Gomera and adapts to the rhythm of their harvests. Almogrote, palm honey, coastal fish, cheeses, and wild herbs appear without a hint of nostalgia: recognizable, precise, and expressed in a contemporary style.

Only fourteen people are seated at each service. The dining room, carved from stone and dark wood, allows the team to explain the origins of each dish and ensures that the experience retains the intimate feel of a Canarian home.

After working as a chef in Barcelona, Lisbon, and Copenhagen, Adrián returned to the Canary Islands to create a culinary concept where technique does not overshadow the ingredients. At Lumbre, each dish preserves a texture, a memory, and a touch of La Gomera’s culinary tradition.

We're not trying to bring the world to Agulo. We want the world to understand Agulo through a table.
