Sepúlveda is synonymous with exquisite cuisine, with its signature dish being wood-fired roast suckling lamb. It is for this reason—and due to its great popularity and long-standing tradition—that Sepúlveda is known as “the cathedral of roast suckling lamb.” The secret to its exquisite flavor lies in the high quality of the raw ingredient—Churro lamb, which is whiter and has longer legs than Merino lamb—and in the simplicity of its preparation. The lamb must be cut into quarters and placed in clay baking dishes. As for seasonings, it needs only a little lard and salt—and, of course, the expertise in handling the ovens demonstrated by the town’s master roasters.
The ideal accompaniments are a salad of lettuce and tomatoes from the Caslilla gardens, a loaf of bread from Sepúlveda, and a fine wine from the Ribera del Duero.
However, the culinary offerings of the town’s many restaurants go far beyond this and stand out for their variety and quality. In recent years, it has evolved tremendously, and you can enjoy traditional dishes made with the highest-quality local Castilian ingredients, such as pork products (chorizo, blood sausage, pork loin…), wonderful and hearty stews, such as the large beans from La Granja, cocido, or Castilian soup; delicious cream soups and salads in the summer; top-quality fish, particularly sea bass and cod; and all kinds of meats.
Another reason to visit Sepúlveda is the quality of its pastries—delicious and irresistible—including, among other delicacies, soplillos, rosquillas de Castrillo, pastas, capuchinas, and sobadas.
