Sepúlveda: The Mecca of Roast Lamb
Sepulveda’s cuisine is characterized by the tradition and simplicity of the Castilian countryside. Sepúlvedais synonymous with exquisite cuisine, whose signature dish is wood-fired roast suckling lamb. That is why—and because of its great popularity and tradition—Sepúlvedais known as “the cathedral of roast suckling lamb.” The secret to its exquisite flavor lies in the high quality of the raw ingredient—Churro lamb, which is whiter and has longer legs than Merino lamb—and in the simplicity of its preparation. The lamb must be cut into quarters and placed in clay baking dishes. The only additions needed are a little lard and salt—and, of course, the expertise in operating the ovens demonstrated by the town’s master roasters.
