SHEPHERD'S MIGAS
Migas del pastor (shepherd's migas) are one of the most authentic dishes of Rubielos de Mora. With humble origins linked to the ancient shepherds of the mountains, this recipe shows how traditional cooking can create a spectacular dish with very simple ingredients.
They are made by cutting bread into very thin slices, which are then dampened and slowly fried in a pan with garlic, oil and the local cured meats, such as longaniza and pork belly.
In Rubielos de Mora it is very typical to serve them with a fried egg on top and to include fresh grapes in the recipe. The contrast between the salty touch of the cured meat and the sweetness of the fruit makes them an irresistible bite, ideal for regaining strength after a day of hiking in the mountains.
