BLACK TRUFFLE (TUBER MELANOSPORUM)
Black Truffle (tuber melanosporum)
The winter truffle harvested in this territory is highly prized for its exceptional quality, linked to two key factors: poor, limestone soils with plenty of stones, and the local climate, with short, cool summers and winters with frequent snowfall.
It is a fungus that grows underground. With the help of a trained dog, which locates it by smell, a person then digs it out of the ground using a machete.
The truffle season is short, starting in November and ending in March.
Comarca Gúdar-Javalambre is the largest truffle producer in Spain, and 20 km from here, in Sarrión, the International Truffle Fair is held from 6 to 8 December.
