The Mills of Alpuente: The Power of Water at the Service of Grain

Before the advent of electricity and industrialization, water mills represented the pinnacle of folk engineering. These structures harnessed the kinetic energy of water currents to turn heavy stone millstones that ground grain into flour, the indispensable staple for the survival of rural societies. In inland regions, the mill was not merely a technical structure: it was the true driving force behind the local economy.
In the mountain town of Alpuente, characterized by its rugged terrain and highly irregular water supply, water-based architecture had to adapt with ingenuity. Along the courses of its ravines and streams, a complex network of facilities was developed that depended on the careful management of every drop of water.
The ingenuity of the Micero Mill and the reservoir system
Among the structures dotting the municipal area, the Micero Mill stands out. Unlike structures located on large rivers with a constant flow, the mills in this region had to cope with sparse or highly seasonal water flows. To overcome this challenge, a system based on regulating ponds was perfected.
The milling process was structured into several well-defined phases:
Accumulation: Water from springs or small weirs was channeled through irrigation ditches to an upper reservoir, where it was stored until the volume needed for operation was reached.
Propulsion: When the gate was opened, the mass of water descended under high pressure through the chute or inclined ramp, channeling all its force toward the lower part of the structure.
Milling: The impact of the water caused the “rodezno” (horizontal waterwheel) in the trough to turn. This movement drove a vertical shaft that rotated the upper millstone (the “volandera”) against the lower, fixed millstone (the “solera”), progressively grinding the grain deposited in the hopper.
The Heart of Rural Society
In an agricultural region focused on rain-fed crops such as wheat, barley, and rye, flour was the daily staple. Farmers from the various villages of Alpuente would periodically come to the mill to process their harvests, paying for the service through the maquila (a fixed portion of the flour or grain itself).
Today, the legacy of the Micero Mill and the other mills remains as a valuable ethnographic testament to the perfect harmony between the sustainable use of natural resources and traditional architecture.
