Ingredients: green and red peppers, ripe tomatoes, extra virgin olive oil, salt, and, optionally, zucchini.

Preparation: Slowly sauté the peppers in olive oil until tender. Next, add the tomatoes (previously crushed or chopped) and simmer over low heat until the mixture reduces and acquires a thick, concentrated texture. Season with salt and let it rest to allow the flavors to develop.
