A great way to get to know both our town and the Gúdar-Javalambre region is to enjoy the culinary experience it offers by sampling the local products and traditional dishes of our area.

As for the products, the Teruel Designation of Origin Ham stands out first and foremost. A high-quality product cured by the area’s dry, cold winds, which, combined with the passage of time, gives the meat a unique flavor.

Likewise, the importance of the Black Truffle (tuber melanosporum) is emphasized. The winter truffle harvested in this region is highly valued for its exceptional quality, attributed to two key factors: the limestone-rich, nutrient-poor, and highly stony soils, and the local climate, characterized by short, cool summers and winters with frequent snowfall. 

Similarly, in Rubielos de Mora, we can find high-quality local wines and craft beers. Additionally, it is worth highlighting other delicacies such as jams and honeys, both carefully crafted to preserve the naturalness and original flavor of the product. 

As for traditional dishes, you can savor migas with grapes, stews, gachas, conserva, or young lamb. As a side dish, in the fall, rebollones mushrooms are a staple, and you can also find other types of mushrooms such as cardoon mushrooms, bujarón, and morels. To round out the tasting, in each town you can enjoy traditional pastries or cakes baked in wood-fired ovens using recipes from days gone by. These pastries are a taste of local identity, associated with family and community ovens, where women—mostly—would gather on special occasions to make these sweets.
