Traditional Orange
Salad Recipe:
Ingredients: oranges, scallions or onions, garlic, extra virgin olive oil, salt, black olives, and, optionally, hard-boiled eggs or cod.
Preparation: Peel the oranges, removing the white pith thoroughly, and cut them into pieces. Add the chopped onion and finely minced garlic. Next, add the olives and, if desired, a hard-boiled egg or flaked cod. Finally, dress with olive oil and salt, mixing well so the oranges release their juice and the flavors blend together.
It is served chilled and is typically accompanied by bread, as has traditionally been the custom in the Sierra de Gata.
