Olleta de blat (EN)
The Castell de Guadalest has long offered its visitors a wide variety of dishes prepared with local ingredients—dishes bursting with aromas and flavors. The olleta de blat is one such dish.
The ingredients are: white beans, black beans, wheat, pork leg, snout, ear, and ribs, Swiss chard,
carrots, turnips, cardoons, sweet potatoes, white blood sausage, salt, and olive oil.
Preparation: Soak the wheat and beans overnight. Wash and chop all the vegetables. Place all the ingredients in a pot with water, season, and simmer for two and a half hours.
