Almogrote gomero with gofio and mojo rojo (EN)

Almogrote is La Gomera’s most iconic cured cheese spread. At Agulo, they make it using mature cheese, oil, garlic and hot paprika, and serve it spread on kneaded gofio or cornbread.

Almogrote is one of the great gastronomic treasures of La Gomera and has a special tradition in Agulo. It is made by grinding cured cheese from the island with olive oil, garlic, red paprika and a pinch of chilli, until a rustic paste with an intense, slightly spicy flavour is obtained.

In the houses of Agulo it is served in three ways: spread on slices of freshly baked millet bread, mixed with kneaded gofio to make "pellas", or as an accompaniment to kid stewed in red mojo. The local cheese, semi-hard and with a natural rind, is the irreplaceable ingredient that gives character to the recipe.

The best time to try it is during the patron saint's fiestas in August, when the village families bring out their own homemade versions and a small gastronomic fair is improvised in the square.
