Beneath the urban fabric of Hita lies one of its most unique and least visible features: an extensive network of cellars and cave dwellings that serves as a valuable example of traditional architecture carved into the earth.

Carved into the slopes of the hill on which the town sits, these spaces form a complex underground system whose origins date back at least to the Middle Ages. Their development reflects a construction solution adapted to the terrain, taking advantage of the earth’s thermal properties as natural insulation.

Unlike traditional cellars used exclusively for wine storage, these cave dwellings feature an interior layout that clearly indicates their use as living quarters. They are structured around excavated galleries connecting various rooms: sleeping areas, storage spaces, kitchens with fireplaces, and even rooms for livestock.

This type of troglodytic architecture is based on criteria of functionality and economy of resources, utilizing materials available in the immediate surroundings. The thermal stability of the subsoil allowed for constant temperatures throughout the year, promoting both habitability and the preservation of products.

The complex of cellars in Hita is a notable example of ethnographic heritage, reflecting ways of life linked to the use of the environment and traditional economic models.

Their use continued until the mid-20th century, and even in more recent times they served as shelters, demonstrating their versatility and historical continuity.

The preservation of these spaces allows us to understand not only traditional construction techniques but also the social and domestic organization of the population in past eras.
