Fat Thursday is a traditional celebration that takes place on the Thursday before Carnival. In the neighborhood of “Ayllón,” residents and friends gather at the wine cellars located on the hill to celebrate this festive day. One of the most typical customs of this day is to enjoy a French omelet sandwich with chorizo, served on olive oil bread.
