Roncal
The beautiful town of El Roncal is the capital of the valley of the same name. This is the resting place of Julián Gayarre (1844-1890), the great Navarrese tenor who triumphed in all the great operas, and whose remains are held in a beautiful mausoleum crafted by the sculptor Benlliure.
Roncal (Erronkari, in Basque) straddles the Esca River in the Navarrese Pyrenees. Through its cobbled streets, arranged in a Y shape, the visitor descends from the parish church, passing several stately buildings, such as the Casa Sanz, the Casa Gambra or the Casa López.
Regarding gastronomy, the area is famous for Roncal cheese, made between December and July with raw milk from Latxa sheep. It has a unique flavour, slightly tangy, very pronounced and buttery on the palate.
